Mediterranean Chicken
- 1 tbsp Mediterranean Flave
- ¼ cup Olive oil
- ¼ cup Dry white wine or water
- 2 lbs Chicken breast or thighs, boneless & skinless
Tzatziki Sauce
- 1 English cucumber
- 1 tsp Kosher salt
- 5 Garlic cloves, peeled and finely minced
- ¼ cup Chopped fresh mint (or 1 tbsp dried)
- ¼ cup Chopped fresh dill (or 1tbsp dried
- 2 cups Greek yogurt, plain
- ½ tsp White pepper, ground
- 1 Lemon, juiced
- ¼ cup Feta cheese
Mediterranean Chicken
Chicken can be cut into large cubes and skewered. I prefer to just butterfly the breast so its thinner and cooks quicker.
Combine Mediterranean Flave, olive oil, white wine, and chicken in a deep bowl or ziploc bag.
Marinate for 2 hours or up to overnight.
Tzatziki Sauce
Mince or finely chop the cucumber. Sprinkle with kosher salt.
A ¼ cup at a time, place cucumber in cheesecloth or strong paper towel and squeeze to remove the cucumber water.
Add cucumber and all other sauce ingredients to a medium bowl and stir to incorporate.
Let sauce rest for at least 30 minutes for flavors to develop.
Serve atop or along side your Mediterranean chicken. Warm naan or a crisp side salad pairs nicely! Enjoy!
