Spanish dried chorizo, flavorful manchego cheese, and crusty bread. This appetizer is an easy, tasty quick-add to a meal.

- 1 French baguette sliced ¾ to 1" thick
- 3 tbsp Olive oil extra virgin
- 1 tbsp Kosher salt
- 1 tsp Fresh cracked black pepper
- 4 med Roma tomatoes or use the pickled farmstand tomatoes chopped
- 4 oz Manchego cheese grated
- 4 oz Chorizo, Spanish chopped
- Balsamic glaze
Preheat oven to 425 °F. Place sliced bread on a baking sheet. Brush with olive oil and sprinkle with kosher salt and fresh cracked pepper.
Bake for 7-10 minutes or until lightly browned. Turn the crostini over and baked again until lightly browned. Remove from oven and cool to room temperature.
Top with roma tomatoes or use some Pickled Farmstand Tomatoes.
Sprinkle with grated Manchego. If you are not using the Pickled Farmstand Tomatoes, drizzle with balsamic glaze.
