Not just any Caesar dressing, this is THE BEST Caesar dressing ever! Truly.

For a grilled Caesar salad, you would slice the head down the center length-wise and trim any brown from the root end. Rinse with cold water and drain in a colander in the fridge. Keep cold until just before grilling.

Preheat your grill to super HOT, drizzle each half with a little olive oil, sprinkle of kosher salt, and a generous grind of fresh pepper.

Grill for 1/2 to 2 minutes. If you grill longer, you’ll just have warm lettuce.

Drizzle with Caesar dressing, shaved fresh Parmigiano-Reggiano, and croutons.

Once you have a grilled Caesar, its hard to go back. Top with grilled protein of your choosing for a meal option.

Ingredients

  • 3 Garlic cloves minced
  • 1 tsp Anchovy paste
  • 1 Lemon, juiced
  • 1 tbsp Dijon mustard
  • 1/2 tbsp white wine vinegar
  • 1 tsp Worcestershire sauce
  • 1 cup Mayonnaise
  • 1 cup Parmigiano-Reggiano
  • 1/2 tsp Kosher salt
  • 1 tsp Black pepper coarsely ground

Instructions

Using an immersion blender or high-speed blender

  • Add all ingredients to a deep cup or bowl that can handle the immersion blender head. Or put all ingredients in the bowl of your high-speed blender. THAT IS IT! This is the easy way!

Hand mixing

  • Whisk together the garlic, anchovy paste, lemon juice, Dijon mustard, white wine vinegar, and Worcestershire sauce.
  • Add mayonnaise, Parmigiano-Reggiano, salt, and pepper.
  • The dressing will keep well in the fridge for about a week.
