Poppy Seed Dressing and Field Green Salad

Ingredients

Poppy Seed Dressing

  • ¼ cup White vinegar
  • 1 tbsp Onion powder
  • 1 tsp Ground mustard
  • cup Sugar
  • 1 tsp Poppy seeds
  • ½ cup Vegetable oil

Salad

  • 1 cup Feta cheese
  • 1 lb Strawberries Sliced
  • ½ cup Walnuts Chopped
  • 1 lb Spring mix or other delicate salad greens

Instructions

Poppy Seed Dressing

  • Combine first five ingredients in a tall bowl or measuring cup, or in a blender. Mix for 30 seconds. Add oil and mix again for 30 seconds until fully emulsified. Ilike to an immersion blender. If you don't have one a regular blender will work. You can mix by hand with a whisk but the dressing will separate because it needs the power of a blender to fully emulsify.

Salad

  • Assemble salad ingredients to the left and dress to taste!

Notes

  • NOTE : When my children were in school, I had a mom (hi Tricie!) call me after her son had dinner at our house the night before. She asked if her son had eaten salad at my house. I said yes and, in fact, he had eaten three plates full. She gasped! Afraid that it had made him sick somehow, I asked if he was ok. Her reply was that he was ok BUT he had NEVER eaten salad and she wanted to know HOW I managed it.
  • ANSWER – this salad dressing! It is a solid, fan favorite. No, it’s not “healthy” in that it does have sugar and oil. You could throttle back on the sugar or substitute it with honey. You could substitute any other oil you like. It will still be delicious but it won’t taste exactly like this version. That’s ok! You’ll wind up with a baseline salad dressing recipe that you can alter at your taste and discretion!
