A nice little appetizer or serve to complement a dinner salad.

I like to use the Pickled Farmstand Tomatoes because it adds so much flavor. You could call this bruschetta but that’s Italian! So, we just call it crostini.
Spanish Chorizo & Manchego Crostini

Spanish dried chorizo, flavorful manchego cheese, and crusty bread. This appetizer is an easy, tasty quick-add to a meal.

Ingredients
- 1 French baguette sliced ¾ to 1" thick
- 3 tbsp Olive oil extra virgin
- 1 tbsp Kosher salt
- 1 tsp Fresh cracked black pepper
- 4 med Roma tomatoes or use the pickled farmstand tomatoes chopped
- 4 oz Manchego cheese grated
- 4 oz Chorizo, Spanish chopped
- Balsamic glaze
Instructions
- Preheat oven to 425 °F. Place sliced bread on a baking sheet. Brush with olive oil and sprinkle with kosher salt and fresh cracked pepper.
- Bake for 7-10 minutes or until lightly browned. Turn the crostini over and baked again until lightly browned. Remove from oven and cool to room temperature.
- Top with roma tomatoes or use some Pickled Farmstand Tomatoes.
- Sprinkle with grated Manchego. If you are not using the Pickled Farmstand Tomatoes, drizzle with balsamic glaze.
- Voila! Yum it up!!!!!
